[AVOCADO SALAD]
This ridiculously easy salad is perfect in the summer when you are craving something light, yet filling and the very thought of getting anywhere near the oven makes you sweat. It looks beautiful and sophisticated, and tastes even better.
INGREDIENTS 1 ripe medium-sized avocado, diced | 1/2 orange or yellow bell pepper, diced | 1/2 cup cherry tomatoes, halved | 2 tablespoons fresh cilantro | 1 teaspoon olive oil | 1 tablespoon lime juice | pinch cayenne | sea salt | pepper
PROCEDURE (1) In a small bowl, whisk together olive oil, lime juice, cayenne, and salt and pepper to taste. (2) Combine vegetables in a bowl, then toss with dressing.
